LINZER HEARTS

Linzer Hearts
(from February meeting)

Beat on medium speed until very fluffy and well blended:

2 1/2 sticks of butter, softened
2/3 cup of sugar

Set aside.

Whisk together:

2 1/2 cups all-purpose flour
1/2 cup whole natual almonds, ground
1 tsp. ground cinnamon

Stir butter and flour mixture together. Chill dough.

Between 2 large pieces of waxed, or parchment paper, roll to 1/8" thick.

Cut with heart-shaped cookie cutter, cutting two hearts for each sandwich cookie.

Cut the center of half of the hearts with another, smaller cookie cutter.

Place on cookie sheet.

Bake in preheated 350 degree oven until pale golden, 10-15 minutes.

Remove from sheet to cooling rack.

When cooled, sprinkle those cookies that had their centers cut out with powdered sugar.

Boil for 2 minutes 1 cup raspberry jam (or your favorite flavor) and cool. Place approimately 1/4 to 1/2 tsp. cooled jam on whole cookie and top with the cut-out, sugar-sprinkled cookie.

Makes approximately 3 dozen sandwiches
